Nothing added, nothing taken away

Our approach to cider making is simple: nothing added, nothing taken away. All of our ciders are wild fermented, no added sulphites, unfiltered, unfined and unpasteurised and we want to encourage people to drink and enjoy the “Welsh Pomona”.
We are one of the few current breweries using only British malts and hops but also incorporating Welsh ancient grains like Hen Gymro.
We have also isolated our own unique farmhouse yeast from Racquety farm itself and it has been identified by the National Collection of Yeast Cultures.

Closing the loop

As part of our circular economy model, we are currently working with the ZERO2FIVE Food Centre at Cardiff Metropolitan University to develop a delicious snack with the spent grain and pomace, which you will be able to enjoy in the tap room. Stay tuned!
 

TAP ROOM | BOTTLE SHOP | DELI

Our tap room is a truly unique part of SOBREMESA Drinks. It is a relaxed and welcoming space where you can find 5 beers and ciders on tap as well as our bottle range to enjoy by the glass or to take away.
We also offer delicious snacks and local produce in our deli counter:

cheese and charcuterie boards (100% Welsh & borders produce)
organic soft fruit (only available during season)

We currently offer very special and unique produce from Spain: cheeses from Cultivo | Quesos Con Rostro and charcuterie from Embutidos Lucio while stock last. We are the only place in the UK offering this selection, so don’t miss this opportunity!
